Calves, but also piglets, trouts, fur-bearing animals, and dogs and cats, all need considerable quantities of lecithin for dietetic and physiological reasons. But lecithin acts first of all as an emulsifier for the hardly needed high-grade fats, which the animals need for proper growth. These fats must be uniformly distributed to ensure complete and uniform intake by the animal. Lecithin improves the digestibility of the fats. In particular, calves milk, a colloidal mixture of mutually insoluble substances water and fat, cannot be produced without suitable means of dispersion. |
